My name is Abbie Casey and I am from upstate New York. I graduated from Northern Vermont University with a Bachelor of Science degree in Wellness and Alternative Medicine, and Anthropology and Sociology.
​
I have always had a passion for food, and when I was 6, I received my first cookbook for Christmas. I was SO excited! It was Rachael Ray's Top 30, 30-minute meals, Kid Food edition. This book changed everything for me. It got me in the kitchen brainstorming my next meal. It had me glued to the Food Network Channel to see what recipe would be featured next. I can even remember using this book to cook my parents a date-night dinner. Anytime I was in a kitchen, cooking or not, I was happy. Fast-forward 16 years, and here I am, using any excuse to create recipes and cook to my hearts delight.

Though cooking is one of my favorite hobbies, I also take solace in traveling, gardening, reading, kayaking, and crocheting. On a warm summer day, you can find me lounging by my grandmother's pool listening to music or a podcast, and on a cold winter day, you can find me curled up with a book, our cat Eve and a good cup of coffee.
​
Cooking, and well, my life, changed when I found out about my gluten allergy. It was my junior year of college when I had to change my relationship with food and everything I knew about cooking, because lets face it, cooking gluten free is complicated and different. Though, at the time, going gluten free seemed like the end of the world (no New York pizza or garlic knots!? Come on!) it really was an opportunity to grow into this new version of myself and create a new, more expansive relationship with food. This fresh start really opened my eyes to the role ingredients have in each dish and ultimately changed the way I think about cooking and creating recipes.

I've had a dream for some time now to have a place where I can share and document my thoughts, recipe ideas, and travel experiences. Simply Abbie is my mental and emotional retreat. Here, I plan to indulge in genuine self reflection, explore my creative side through various projects, and ultimately share gluten free recipes that are incredibly good; that do not taste like cardboard, and that will make you question if it's really gluten free.
