Gluten Free Cinnamon Streusel Muffins

Every now and then I crave a sweet treat to have with my coffee. My boyfriend, Tim, mentioned two words: "coffee" and "cake" and the gears in my head began spinning. But what's easier than a cake? - I thought - muffins! And what is the best part about the traditional coffee cake? The wonderful taste of cinnamon! I began brewing a plan and came up with this simple, delicious, and 100% gluten free muffin recipe!



The most incredible part about these muffins is the streusel. The crumbly cinnamon streusel begins to melt into the muffin as they bake and when the muffins are done, you have a delicious, ooey gooey, sweet center. The first bite is scrumptious and leaves you wanting more (and more and more!). My mouth is watering just thinking about these muffins!



First, you'll want to preheat your oven to 350 degrees and gather your muffin pan and two mixing bowls. Next, combine the dry ingredient and stir into one bowl. Then add the wet ingredients to the same bowl and stir - let sit for 10 minutes. In the second bowl, you can make your streusel crumble. When the 10 minutes are up, pour the muffin mix into the greased muffin pan and sprinkle all of the crumble on top. Bake for 15-20 minutes - until golden. Enjoy while they're warm!



Easy Gluten Free Cinnamon Streusel Muffins Recipe:

(Makes 6 Medium Sized Muffins)

Muffin Mix:

1 Cup Gluten Free Flour Blend (I used King Arthur Flour Measure for Measure GF flour - contains xantham gum)

1/3 Cup Sugar (I did 3 Tbsp White Granulated Sugar and 2 Tbsp Brown Sugar)

1/4 tsp Salt

1 tsp Baking Powder

1/4 Cup Melted Butter (substitute Coconut Oil for Vegan option)

1 Egg (substitute Chia "Egg" or 1/4 Cup Apple Sauce)

1/3 Cup Milk (substitute Almond Milk)

1 tsp Vanilla Extract

Streusel Crumble:

2 Tbsp Gluten Free Flour

1/2 tsp Cinnamon

1/3 Cup Sugar

2 Tbsp Melted Butter (substitute Coconut Oil)

Instructions:

Preheat Oven to 350 Degrees

Grease Muffin Pan

Combine Muffin Ingredients: In a bowl, combine Gluten Free flour blend, sugar, salt, and baking powder and stir. Add in melted butter and stir until crumbly. Add in egg, milk and vanilla extract and stir until well combined. Let sit for 10 minutes.

Combine Streusel Ingredients: In a seperate bowl, combine Gluten Free flour blend, cinnamon and sugar and stir. Add melted butter and mix until crumbly. Set aside.

After 10 minutes: Pour muffin mix into muffin pan. Sprinkle streusel crumble on top of the muffins.

Bake for 15-20 minutes (until golden)

Let cool and then remove muffins from pan.

Enjoy while they're still warm!
