Gluten Free Maple Streusel Banana Bread

Happy Spring! I love this time of year - the birds are chirping, the snow is melting, the sun is shining, and the grass is growing green. It is such a peaceful and enlightening time to watch nature bloom. Speaking of, I already have most of my garden planned - lots of herbs and lavender! I can't wait to see it all come to life. But in the meanwhile, I will continue to sip on my coffee and devour delicious GF baked goods indoors while daydreaming of warm summer days.

This gluten free maple streusel banana bread is heavenly! It makes for a great breakfast treat, snack, or dessert! I have been enjoying it alongside my morning cuppa joe with some natural peanut butter slathered on top. The streusel crumble does wonders for this bread. The maple flavor, the soft banana bread, and the cinnamon crumble topping is all so scrumptious and easy to make!

First, gather two mixing bowls and your food processor. Place 3 small/medium sized bananas in the food processor and blend until smooth. In the first bowl, mix together all dry ingredients. In the second bowl, mix together all wet ingredients (minus the blended bananas). Begin to slowly combine the dry ingredients with the wet, as well as the blended bananas. I poured half of the dry mix and half of the blended bananas into the wet ingredients bowl and stirred well. Then finished adding the second half of the dry mix and the blended bananas and stirred until smooth. Let sit for 10 minutes to thicken.

While the banana bread mix is sitting, melt the butter in a microwave safe dish and add the remaining streusel ingredients and stir until crumbly and well combined. When the 10 minutes are up, pour the banana bread mix into a greased 9x5 bread pan and sprinkle the streusel crumble on top. Place in the oven for 45 minutes (or until the bread is golden and the center is cooked thoroughly).

I recommend baking the bread for 30 minutes and then wrapping aluminum foil around the top of the bread pan to avoid burning the bread and then baking it for an additional 15-20 minutes.

This maple streusel banana bread is simple to make and takes traditional banana bread to a whole new level! Enjoy it with a cup of coffee or tea, serve it at your weekend brunch, or savor it for your Easter dessert!

Gluten Free Maple Streusel Banana Bread Recipe:
For the Bread:
- 1 + 3/4 Cup Gluten Free Flour
- 2 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1/2 tsp Salt
- 2 tsp Cinnamon
- 1/3 Cup Coconut Oil (can substitute vegetable oil)
- 1/2 Cup Maple Syrup
- 2 Eggs, beaten
- 1/2 tsp Vanilla Extract
- 1 Cup Bananas, mashed (roughly 3 small/medium bananas)
- 1 Tbsp greek yogurt (can substitute sour cream)
For the Streusel:
- 3 Tbsp Butter, melted
- 1/3 Cup Gluten Free Flour
- 2 + 1/2 Tbsp Brown Sugar
- 1/2 tsp Cinnamon
