Gluten Free Garlic Alfredo Zucchini Spirals

One of my favorite flavors to highlight in any lunch or dinner recipe is garlic. This dish is jam packed with garlic and a hearty forkful will show you this with subtle hints of Parmesan and onion - YUM!

Start by browning your onions and garlic in olive oil.
While they're cooking, you can spiralize your zucchini. I use a hand-crank vegetable spiralizer. You can purchase one on amazon for an affordable price: https://www.amazon.com/Bonsenkitchen-Veggie-Spiralizer-Slicer-Vettable/dp/
- If you don't have much time to cook, make this recipe faster by purchasing the pre-spiraled zucchini noodles that should be available in your grocery's freezer section and/or produce aisle.

Once the onions are ready, add the spiraled zucchini to the pan, add more olive oil and stir, cooking it at medium heat for about 8 minutes, or until zucchini spirals are tender.


Now for my favorite part - Add in the spices! I stirred in garlic powder (the more the merrier in my opinion), onion powder, cumin, paprika, salt and pepper.
I think one of the best parts about cooking is how you can really make any recipe fit to your preferred tastes. So, if you prefer one spice over the other, feel free to mix it up and add in some more flavor (or less, if that's your jam)! I don't like bland food, and I know that i'm not alone here. I would bet a pinch of chili powder and coriander would go a long way with this dish, too. A note for next time!

Next, stir in the garlic alfredo sauce. I purchased a jar of roasted garlic alfredo in the store. But if you want to make your sauce from scratch, I will include my go-to garlic alfredo recipe below for you. I just like the convenience of a jar because, let's face it, I am a working gal who doesn't always have the time and energy to make everything fresh, you feel me?

Now that everything is stirred, here comes the absolute best part: eating it!
Go ahead and serve this bad-boy while it's still hot.

I added more pepper and sprinkled Parmesan cheese on top for a pinch more flavor. I'm a real big fan of cheese, so I couldn't resist making this dish more cheesy!
GLUTEN FREE GARLIC ALFREDO ZUCCHINI SPIRALS RECIPE:
1 medium yellow onion, diced
4 cloves garlic, minced (more or less cloves depending on your taste)
4 Tbsp extra virgin olive oil
2 Cups zucchini spirals (I used 4 medium/large zucchinis)
1 Cup garlic alfredo sauce
2 tsp garlic powder
2 tsp onion powder
1 tsp ground cumin
1/2 tsp paprika
1/2 tsp salt
1 tsp pepper
2 Tbsp grated Parmesan cheese
GLUTEN FREE GARLIC ALFREDO SAUCE FROM SCRATCH:
1/2 Cup (1 stick) butter
2 Cups heavy cream
1 block (8 oz.) cream cheese
2 cloves garlic, minced
1 Cup grated Parmesan cheese
1/4 Cup Asiago cheese
1 Tbsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1 tsp Italian seasoning
